How to make carrot cake?
Carrot cake is a crowd-pleaser. Top this one with our cream cheese frosting.
My thoughts:
Play around with this recipe by adding pineapple, raisins or nutmeg to the batter.
Ingredients
- 4 eggs
- 1 1/4 cups vegetable oil
- 2 cups sugar
- 2 teaspoons vanilla
- 2 cups flour
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 teaspoons cinnamon
- 3 cups grated carrots
- 1 cup chopped pecans or walnuts, optional
Instructions
- Preheat oven to 350 degrees Fahrenheit.
- Grease and flour a 9 x 13-inch cake pan.
- In a large bowl, beat together eggs, vegetable oil, sugar, and vanilla.
- Add flour, baking soda, baking powder, salt, and cinnamon.
- Stir in pecans and nuts.
- Pour into prepared pan.
- Bake for 40-50 minutes, depending on your oven.
- Cool it.
