Spiced Pecans Recipe

Ingredients

  • 2 1/2 cups pecans
  • 2 tsp. vegetable oil
  • 1 cup white sugar
  • 1 tsp. cinnamon
  • 3/4 tsp. salt
  • 1/4 cup water
  • 1 tsp. vanilla extract

Instructions

  1. Preheat oven to 300 degrees Fahrenheit.
  2. Toss pecans with vegetable oil until evenly coated.
  3. Place on flat baking sheet and roast for 25-30 minutes, stirring frequently.
  4. Refrigerate it.
  5. Combine sugar, cinnamon, salt and water in a heavy saucepan.
  6. Cook over medium heat until sugar dissolves.
  7. Boil mixture until it comes to the soft ball stage (236 degrees Fahrenheit.)
  8. Remove from heat and add vanilla.
  9. Add pecans and mix until evenly coated.
  10. Place pecans onto waxed paper or aluminum foil and separate with a fork.
