How to make couscous salad?
You can make this couscous salad up to one day in advance. Herbs and garden vegetables give it a very fresh flavor.
My thoughts:
You can double, or even triple it for a large baby shower such as the Drop-In baby shower.
Ingredients
- 1 cup chicken broth
- 3/4 cup couscous
- 1 cup Italian dressing
- 2 cups fresh spinach, chopped
- 1 cup halved cherry tomatoes
- 4 oz. water chestnuts, sliced
- Fresh parsley
- Green onion, chopped
Instructions
- Bring chicken broth to a boil.
- Add couscous and stir.
- Remove from heat and let stand 5 minutes, covered.
- Transfer couscous to a bowl and add salad dressing.
- Cover and chill.
- Before serving, toss with spinach, tomatoes, water chestnuts, parsley and green onion.
